Dinner: Meatloaf - Based On A Recipe From Gordon Ramsay

Ingrediance
1\4 cup butter
1 large onion, finely chopped
4 celery stalks, finely sliced
3 carrots, finely chopped
1 green pepper, finely chopped
2 garlic cloves, peeled and chopped
1 tbsp chopped fresh parsley
1 tbsp chili powder
1 tbsp Worcestershire sauce
2 bay leaves
4 ounces evaporated milk
4 ounces tomato ketchup
1lb minced beef
1lb minced pork or sausage meat
2 eggs, lightly beaten
1 cup breadcrumbs
Freshly ground salt and pepper
1. Melt the butter in a large saucepan and add the onion, celery, pepper, spring onions, garlic, parsley, chili sauce, Worcestershire sauce and bay leaves. Cook over a gentle heat, stirring occasionally, for about 6 minutes.
2. Add the evaporated milk
Add Ketchup and continue to cook for another 2 minutes.

Remove from the heat and cool
3. Discard the bay leaves.

4. Preheat the oven to 264F

5. Place the beef and pork in a large bowl; add the eggs, breadcrumbs and vegetable mixture, and season.

6. Place the mixture in an ungreased roasting dish and bake for 25 minutes.
Increase Temp To 400F Cook For 35-40 Mins More
At The End Of The Backing Time The Internal Temp Of The Meat Loaf Was At 170F
I Removed Some Of The Oil When It Was Cooling. Some Of The Oil Could Have Been Avoided If I Would Have Used Leaner Beef And Pork.

Spring onions are not in your list of "ingrediance" but are in step 1...
